RAPID AND SAFE PASTEURISATION
COOKING AND PASTEURISING IN JUST ONE STEP
MICROPAST® is based on gentle steam cooking. For this purpose, the food is packaged in special packaging and guided through a microwave tunnel.
The microwaves heat the food being cooked from the inside. In just 5 to 12 minutes the core temperature increases to 85-95 °C – with no hot or cold spots – for safe pasteurisation. The advantage is that differences in cooking times of the various products are bridged, so that separate pre-cooking is superfluous.
Steam escaping from the food is an excellent conductor of heat. Hence the process is managed completely without the addition of liquids. The opening in the lid regulates the pressure in the packaging to a constant 1 bar. The shape and succulence of the food is preserved as a result.
